Royal Iftar

A Feast of Heritage and Timeless Flavours with Chef Bethany Kehdy

This Ramadan, Emirates Golf Club, in collaboration with acclaimed Chef Bethany Kehdy and the Club’s own Executive Chef Dayan Anthony, presents an Iftar experience that reimagines the culinary traditions of West Asia and North Africa (WANA), blending heritage with modern artistry. Set within the serene and elegant Royal Majlis, this dining experience is a tribute to the essence of Ramadan - reflection, gratitude, and togetherness.

Chef Bethany Kehdy, renowned for her deep-rooted knowledge of WANA’s culinary heritage, brings a lifetime of passion for preserving and reinterpreting the flavours passed down through generations. Raised between Beirut and her ancestral farm in the Lebanese mountains, she has dedicated her career to reviving the rich food traditions of the region. Paired with the expertise of Emirates Golf Club’s own Executive Chef Dayan Anthony, this Iftar offering harmonises the past and present, honouring centuries-old techniques while embracing contemporary culinary artistry.

A Feast for the Senses
From the moment you arrive, the scent of incense and the soft glow of lanterns welcome you into a space of warmth and tranquillity. A traditional offering of dates, Jallab, and Gahwa invites you to pause and savour the moment, setting the stage for an evening steeped in culture and connection.

At the heart of the Iftar lies a delectable spread featuring silky hummus drizzled with za’atar pesto, beetroot mutabal topped with a crisp sour apple salsa, vibrant Beiruti tabbouleh, slow-braised 8-hour lamb shank, and a smokey freekeh pilaf. Indulge in the ever-popular lamb and beef sambousek, served with a velvety harissa garlic whip. Warm up with a comforting bowl of lentil soup or the rich, spiced depths of a silky harira.

Live cooking stations bring an interactive element to the evening, offering delicacies such as succulent ouzi with fragrant Arabic-spiced rice, a pasta station with customisable accompaniments, and an oriental mixed grill featuring chicken tikka, lamb kofta, and harissa-spiced fish. The main courses showcase vibrant and bold flavours, from seafood machboos and saffron-infused chicken fatteh to aromatic vegetable biryani and expertly grilled samak mashwi, served with roasted vegetables and vermicelli rice.

End on a sweet note with a selection of traditional Arabic desserts, including kunafah nabulsi, assorted baklava, and the comforting warmth of Umm Ali. For those with an international palate, treats like chocolate mousse, rice pudding, and fresh seasonal fruits offer the perfect finale.

More Than Just a Meal - A Journey Through Culture and Tradition
Enhancing the evening’s ambiance, the soulful sounds of a live oud player drift through the air, weaving together the threads of history, culture, and storytelling. This Iftar is not just about breaking fast - it is about reconnecting with tradition, celebrating shared heritage, and fostering a sense of togetherness.
